{bloggers night in with Sauza}

Back in June, I took a whirlwind 36 hour trip to New York City to shoot a fun video for Sauza's new Sparkling Margarita along with 4 other fabulous bloggers!  I have never done anything like this before (I certainly have never been in front of the camera!) so I was a bit nervous, but it ended up being the best time ever.  You might have seen some of the behind the scenes shots on my instagram under this hashtag, but I thought it would be fun to share with you some of the great images captured by Hallie & Mel.  I can't wait to show you the video that resulted from this awesome shoot and I'll be posting it here just as soon as I have it!!

{the stylists were continually pinning my hair up turning takes because of the crazy humidity}

{mini egg mcmuffin sandwiches}

This past weekend, we hosted the "breakfast for dinner" themed birthday party for our friend Kay.  It was a great success and I can't wait to share the rest of the pictures soon.  Besides a spread of cereal, bacon, french toast and pancakes, Chris whipped up some mini egg McMuffin sandwiches for our guests.  These were cooked and assembled before everyone arrived and simply popped back into the oven to re-heat for a few minutes once the party started.

What you need (for roughly 24 sandwiches):

  • 2 dozen eggs
  • 2 packs of bacon (you get about 4 sandwiches from one strip of bacon)
  • 2 loaves of sourdough sliced bread
  • 1 pack of shredded cheese
  • 2.5 inch biscuit cutter
  • muffin pan
  • sandwich skewers
  1. Cut out circles from slices of bread using biscuit cutter- you should be able to get about 2 circles per slice. Place these on a baking sheet and lightly toast in the oven. Set aside.
  2. Cook up the bacon in a pan. Let cool and then slice each strip into 3 to 4 rectangular pieces about 2 inches long. Set aside.
  3. Break eggs into a bowl and scramble.  Place about 1/4 inch of egg in each tin of a muffin pan. Bake eggs in oven for about 10 minutes at 350 degrees.
  4. Place about a tablespoon of shredded cheese on each slice of toasted bread. Top with egg and slice of bacon.  Finish with the top slice of bread and skewer the sandwich to hold it all together.
  5. Reheat the sandwiches for about 10 minutes at 350 degrees.

here are some sneak peek photos from the party:

{bridal shower sneak peek}

Sorry for my complete absence on the blog last week!  We have been overwhelmed with completing some DIY projects for the wedding (including this & this) and tying up some loose ends with all the little details that go along with wedding vendors.  Yesterday, my bridesmaids (below) and future mother in law threw me the most amazing bridal shower I could have ever imagined- the photo above is a small sneak peek.  Later this week, I will have some guest blogging from one of my bridesmaids about the different diy elements they put together for the shower.

{wedding projects sneak peek}

 If you follow me on Instagram (user name: mintloveblog), you have probably already seen that we have been knee deep in wedding projects over the past couple weeks.  While I will be waiting until after the wedding share the full tutorials on most of the projects, I thought it would be fun to show a little sneak peek today...
