{mini ice cream sandwiches}



We had some friends over for dinner on Sunday and I made up these mini ice cream sandwiches as a quick dessert.  I would consider most of the preparation of these to be "cheating" since I used both store-bought cookie dough and ice cream, but hey- I assembled them!  For the cookie dough, I bought a tub of Tollhouse Chocolate Chip cookie dough and used a teaspoon to measure out the cookies.  At this size, the cookies still took about 9 or 10 minutes in the oven at 350º.  After the cookies cooled, I placed a small spoonful of ice cream on each one and threw them into the freezer until a few minutes before we were ready for dessert. (Technically these are gelato sandwiches since we used Sea Salt Caramel flavored gelato by Talenti.)  Next time I make these I definitely want to use a few different flavors of ice cream and make each guest a "flight" of sandwiches on individual plates.

I just discovered your blog through "A Subtle Revery", because I fell in love with the homemade bunting and had to see where the picture came from originally...which lead me here, and I can't get enough. Your blog is ADORABLE!! I am only just beginning...spent about 10 minutes scrolling and am literally getting anxiety because I feel like I am going to have to look through every single last one of your posts or I won't feel satisfied. From the little I've seen so far, your place is adorable...I love all the cocktails you create, and I am just kind of obsessed, especially after seeing that you are my age and live (or lived) in SILVERLAKE, which is pretty much my dream location. My best friend lives there and I visited her last year...I couldn't get enough of Intellegentsia and the dollar-tacos at Malo...I didn't have enough time to explore because there are just sooo many cute little places. ahh I wish I lived in Silverlake! Anyways I am sure you are going to be getting a lot more comments from me.....so excited to have stumbled upon you!

  2. Actually I have a question--- do you have an 'archive' section? I don't see one and don't know if I'm missing it, but am wondering if there is an easier way to peruse your blog without just always clicking the 'older posts' button. Haha...let me know! I want to keep reading!

  3. ah, okay-- I answered my own question. omg sorry for the millions of comments but I realized after scrolling about 2 more minutes that I'd gotten to your very first post ever. Which alleviates my anxiety because it means I don't have to spend the next 7 hours going through your archives, which I would have done, because of how much I love your content. Your blog is so new! I am excited about what's to come. You've done some really awesome stuff for how new your blog is! I am impressed.. All of the graphics and everything are really neat and you are so creative. I just saw the chocolate covered pretzel idea for Valentines day and am going to post about it b/c it's too cute not to. Same with the homemade bunting. You said you had always wanted to start a blog, and I can see why! Again, sorry for the novel I just wrote through comments...I have a problem with being brief.

  5. Fashalina- Thank you for the love!! I didnt have an archive section when you left your comment- only because at the time the blog was so new I didnt think it warranted one! But I have one now :)

    Franklin & Reynolds- great idea- I wanna see pics! I saw a cute post of someone who rolled skinny cow ice cream sandwiches in sprinkles- which I am thinking of doing next time I make these.
