When I first started going out in San Francisco, once I was of drinking age, my go to cocktail was always a Vodka Collins. Tom Collins and other Collins cocktail variations are actually great classic cocktail recipes, but when you are ordering a vodka Collins at some hipster bar in the Mission District of SF you usually end up getting glorified spiked lemonade (dare I even compare it to a Smironoff Ice. I wont.) Anyways, Collins cocktails still hold a special place in my heart and so for today's cocktail I bring you highly refined version- The Lavender Collins (taken from 12 Bottle Bar)- using the syrup from yesterday's post:
